My Merry Christmas
Since we have moved from Florida to Colorado, Christmas has really changed form for us and our little family. I now say family because we are married and have our english springer spaniel puppy, Collins. It feels like a little family! 3 stockings hung and all :)
We are blessed to have a wonderful family and friends but we are also blessed to be able to share special holidays together, just us. We live so far away, it is unpractical and so expensive to try to make it back to either Wisconsin, Florida, or Richmond to visit our families for the holidays. So we celebrate with them early and for the third year in a row, we have a beautiful white Christmas at home in Denver.
For me, Christmas means cooking, menu making, grocery shopping, planning, and finally eating and enjoying the holiday meal! This year we had seafood on Christmas Eve; bacon wrapped shrimp and mussels in curry and coconut sauce. Then for Christmas morning brunch I make a Christmas Quiche with Poinsettia cocktails. Then we had an antipasto plate with veggies for a snack before I make our hearty Christmas dinner.
I attempted Beef Wellington, and for the most part, it was a success! The meat was a bit overdone (medium and medium well instead of medium rare and medium) and I used a flaky philo pastry instead of a buttery, thick puff pastry. The mushroom duxelles and prosciutto inside the puff pastry, wrapped around the fillet mignon was phenomenal! It was served with roasted Brussel sprouts and hasselback potatoes and LOTS of Pinot Noir. For dessert, what a treat! I caramelized some pears with nutmeg, melted dark chocolate, and served all on top of a vanilla frozen yogurt. My husband was very happy :)
We have more seafood that we didn't cook for our seafood feast on Christmas Eve so this weekend we get to look forward to 2 1/2 lbs. of King Crab Legs, Spicy Crab Cakes, and orange roughy! I am so thankful to be able to spend time at home, making beautiful warm food for our little family, and enjoying our time together.
Merry Christmas to us!
